Exploring vegan cuisine doesn't have to be complicated. Here are a couple of simple vegan recipes that you can whip up in your kitchen, using ingredients that are easy to find.


Vegan overnight oats recipe

Vegan overnight oats are a simple, nutritious, and delicious breakfast option. You can prepare them the night before, so you have a wholesome and filling dish ready to go in the morning. Here's a basic vegan overnight oats recipe that you can customise with your favourite toppings.

Ingredients:

  • 50g rolled oats (ensure they are certified vegan)
  • 2 tbsp vegan yoghurt 
  • 1/2 tsp ground cinnamon 
  • 50g frozen berries
  • Your choice of toppings (e.g. fresh berries, sliced banana, chopped nuts, dried fruit, or a drizzle of nut butter)

Instructions:

  • In a mason jar or airtight container, layer your ingredients. Start with a layer of vegan yoghurt, top with a layer of oats and then add some frozen berries and repeat. Finish with a final layer of yoghurt.
  • Leave in the fridge overnight.
  • Remove from the fridge in the morning. Stir the ingredients until well mixed. The oats will have absorbed the yoghurt to create a creamy, pudding-like consistency.
  • Top your vegan overnight oats with your choice of fresh fruits, nuts, or a drizzle of nut butter for added texture, flavour, and nutrition.

VEGAN CHICKPEA CURRY 


A warming dish for cold winter nights, this chickpea curry will leave you feeling full and satisfied. You can make extra and keep the curry in the refrigerator for up to two days or in the freezer for two weeks. 

    Ingredients:

    • 2 tins of chickpeas, drained and rinsed
    • 1 tin of chopped tomatoes
    • 1 onion, chopped
    • 3 cloves of garlic, diced
    • 1 tbsp curry powder
    • 1 tsp cumin
    • 1 tsp turmeric
    • 1 tsp paprika
    • Salt and pepper to taste
    • 1 cup of coconut milk
    • Fresh coriander to garnish

        Instructions:

        • In a large pan, fry the chopped onion and minced garlic in oil until soft and turning slightly golden.
        • Add the chickpeas, diced tomatoes, and spices. Cook for a few minutes.
        • Pour in the coconut milk and let it simmer for about 20 minutes, until the sauce has thickened.
        • Serve your vegan chickpea curry over rice and top with fresh coriander. 

         

        VEGAN CHILLI

        Serve a hearty vegetable chilli with baked potatoes and salsa for a delicious and comforting January meal. The vegetables add plenty of colour and nutrients to your plate, we guarantee you won’t miss the meat!

        Ingredients:

        • 1 yellow pepper, chopped
        • 1 red pepper, chopped
        • 1 small aubergine, chopped
        • 1 small courgette, chopped
        • 1 onion, chopped
        • 2 garlic cloves, diced
        • 2 tbsp tomato puree
        • 1 tin of chopped tomatoes
        • 1 tin of mixed beans, drained
        • 2 tsp ground cumin
        • 1/2 tsp chilli flakes
        • 1 tsp smoked paprika
        • 1/2 tsp cinnamon
        • 1 vegetable stock cube
        • Fresh coriander to garnish

        Instructions:
        • In a large pan, fry the chopped onion, peppers, aubergine and courgette in oil until softened. 
        • Add the garlic and spiced to the pan and heat until the aromas are released. Then mix in the tomato puree. 
        • Add the tin of chopped tomatoes, tin of beans and stock. Leave to simmer for 20 minutes. 
        • Serve over baked potatoes or baked sweet potatoes and top with fresh coriander and salsa.
